What can I say about these bars, WOW!!! These are so very good that as I am typing I am planning on making more. Need something filling without the bread for lunch? Well these are perfect for a quick bite while on the go or sitting at your desk and they last for a week. These are such a treat, you will have request to make this over and over again. Enjoy!
What you will need: Food Processor
Ingredients: 6 Time: 10 minutes Makes: 12 Bars
1 cup of Dried Figs
1 Cup of Sliced Dried Coconut
1 Cup of Dried Cranberries
1 1/2Cup of Raw Unsalted Cashews
1 tbsp of Cocnut Oil
1/2 cup of Melted Unsalted Peanut Butter
Place Dried Figs, Coconut, Cranberries, 1 cup of Cashews and Coconut Oil into a Food Processor and Puree until sticky but the Cashews are in small pieces.
Pour your mixture into a bowl and stir in 1/2 cup of Cashews.
After it’s mixed pour the mixture into an 8 x 8 square Pyrex Dish and flatten ingredients until stuffed into the dish with your hand or fist.
Once flat spread Peanut Butter on top. You can cut into the mixture into a Bar shape and serve immediately or freeze for an hour to make the bar firm.
